Gaucho Rollups

1 pound ground beef
chopped onion
minced green pepper
14.5 oz can of diced tomatoes
8 oz can of tomato sauce
4 Tablespoons taco seasoning
1 Tablespoon chili powder
1 cup instant rice
1/4 cup water
1 cup mexican cheese blend
Tortillas

In a large plan, brown ground beef with onion and green pepper; drain.  Add diced tomatoes, tomato sauce, taco seasoning, and chili powder.  Mix and heat through.  Then, add instant rice and water.  Heat until rice is cooked.  Top with cheese, let melt.  Then, place gaucho filling in a flour tortilla.  Roll up, and enjoy!

Gran Sazon flour tortillas work great with this recipe - the flavors mesh well together.

Mediterranean Pasta



16oz Penne Pasta
1/2 cup diced tomatoes
1/3 cup sauteed mushrooms
        (more or less tomatoes and mushrooms to your taste)
2oz white zinfandel
4oz marinara sauce
         add crushed red pepper flakes to sauce to a level that satisfies your need for a "kick"
4oz heavy whipping cream
handful of fresh spinach

Boil pasta to al dente, set aside and keep chilled
Sautee mushrooms, add pasta and tomatoes.  Add wine and marinara and cook until it thickens up a bit.  Then add whipping cream - Once this is heated through, mix in the spinach and serve.

I like to serve this on a bed of spinach with ciabatta bread fresh from the oven!
